1-2tablespoonsof gingerchopped, or some dried ginger
1teaspoonfresh sage or 1/2 teaspoon crumbled dried sage
1cupplus two tablespoons dry red lentils
3cupswater
1package frozen chopped spinach or kale10 ounces, or 2 cups fresh, chopped
1teaspoonsalt
optional: pepper
optional: chopped olives
Instructions
Put the lentils and water into a pot with the garlic and ginger. Heat to boiling. Let cook until the water is absorbed. Stir in the greens (still frozen is okay) and heat through.
